Salted Almond Buttermilk Cake

This cake has an almond filled glaze that means it needs no icing, but a little ice cream wouldn't hurt when serving it!

Ingredients

For the cake
  • 1/2 cup (1 stick) salted butter, softened
  • 1 cup light brown sugar
  • 1 cup white granulated sugar
  • 2 large eggs
  • 2 cups buttermik
  • 1 teaspoon vanilla
  • 3 cups plain flour
  • 1/4 cup almonds, ground fine
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
For the almond topping
  • 1/2 cup (1 stick) salted butter, melted
  • 1 cup light brown sugar
  • 1/4 cup buttermilk
  • 1 cup sliced almonds
  • Flake salt for finishing

Instructions

  1. Preheat your oven to 350 degrees. Prepare your 9" x 13" pan with cake goop or grease and flour.
  2. Cream the butter, brown sugar, and white sugar until light and fluffy, about 3 minutes.
  3. Add in one egg at a time and continue beating 2 - 3 minutes longer.
  4. Add in the buttermilk and vanilla and beat until well combined.
  5. In a separate bowl, combine the plain flour, ground almonds, baking soda, and salt.
  6. With the mixer on low, begin adding to the buttermilk mixture a spoonful at a time until well combined, scraping the sides and bottom as needed.
  7. Pour the batter into your prepared pan and bake for 40-45 minutes.
  8. As the cake nears getting done, begin preparing the glaze. Combine the melted butter, brown sugar, buttermilk, and almonds.
  9. Just before the cake tests done, carefully pour the almond mixture evenly over the cake and continue baking for 5 minutes longer.
  10. Immediatly after removing the cake from the oven, sprinkle with flake salt. The topping will be sticky. You can serve it warm or completely cooled. The cake will keep for about 3 days at room temperature. If you store the cake in the fridge, you may need to warm it slightly to soften the glaze a bit.
