Cranberry Orange Pound Cake

This is the perfect cake to serve during the holidays. Pound cakes are also great for giving for a hostess gift and freeze well for serving later.

Ingredients

  • 1 bag, (11 oz) of cranberries, fresh or frozen (reserve a few for garnishing if preferred)
  • 2 sticks (1 cup) butter, room temperature
  • 2 1/2 cups sugar
  • 4 large eggs, room temperature
  • Zest of 1 orange
  • Juice of 1 orange
  • 3/4 cup of whole buttermilk (or enough combined with the orange juice to equal 1 cup total)
  • 3 cups plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Juice of 1 orange for after the cake cools
  • Powdered Sugar to dust cooled cake

Instructions

  1. Preheat the oven to 325 degrees.
  2. Prepare your baking pan with Cake Goop or by greasing and flouring your bundt pan.
  3. In a stand mixer or large mixing bowl, add the sugar and butter, and cream until it comes together like a dough. On slow, add in one egg at a time, mixing well in between, then increase the speed again and beat until light and fluffy, about 4 - 5 minutes.
  4. Reduce the speed and add the zest, juice, and buttermilk.
  5. Sift together the dry ingredients and add them by spoonfuls to the batter with the mixer on low speed, scraping down the bowl as needed. When mixed, remove from stand mixer and gently fold in the cranberries. Spoon into your baking pan and smooth out the batter evenly.
  6. Bake for 1 1/2 hours or until it tests in the center for doneness by inserting a toothpick. If it comes out clean, it is done. Let it cool 10 minutes in the pan, then turn it out and let it cool completely.
  7. Juice another orange and drizzle the juice slowly over the cake, letting it soak in. Dust with powdered sugar and serve.
